another pudding recipe : )

The other day, I wrote about my recent rediscovery of instant pudding and all of its wonderful possibilities in dessert recipes.  Today I was sent a recipe from Taste of Home that I thought I would share, and it too uses instant chocolate pudding.  Obviously I haven't tried it yet, but it looks absolutely delicious!  Here is the recipe for Frosty Coffee Pie (It seems the only downfall might be the calorie-count - 1 piece = 429 cal.):

  • 8 Servings
  • Prep: 15 min. + freezing

Ingredients

  • 1/4 cup hot fudge ice cream topping, warmed
  • 1 chocolate crumb crust (9 inches)
  • 3 cups coffee ice cream, softened
  • 1 package (5.9 ounces) instant chocolate pudding mix
  • 1/2 cup cold strong brewed coffee
  • 1/4 cup cold milk
  • 1-3/4 cups whipped topping
  • 1 cup marshmallow creme
  • 1/4 cup miniature semisweet chocolate chips
  • Directions
  • Spread ice cream topping into crust. In a large bowl, beat the ice cream, pudding mix, coffee and milk until blended; spoon into crust.
  • In another bowl, combine the whipped topping and marshmallow creme; spread over top. Sprinkle with chocolate chips. Cover and freeze until firm. Yield: 8 servings.
Nutrition Facts: 1 piece equals 429 calories, 17 g fat (9 g saturated fat), 20 mg cholesterol, 463 mg sodium, 67 g carbohydrate, 2 g fiber, 5 g protein.


In other news, I am eagerly decorating our balcony.  Luckily CVS was still having its bogo sale on the beige outdoor chairs so I bought two of them and put the two seat covers on them.  They look fabulous! The plastic pots I bought from IKEA did not have holes in them for the water to drain so Scott drilled holes in them for me and they are ready for flowers.  I think I'm going to wait on those though because it's supposed to be a little chilly again this week.  Hopefully we can go get some African marigolds sometime in another week or two. 


In light of the delightful spring weather, I thought I would also include this poem by one of my favorite poets, Billy Collins:

    I've become obsessed with pudding lately, too. It's like I can't get enough of it!
